We are thrilled to announce that the Durban branch will be owned and run by Antonette Kennedy and Cindy Balanco Antonette is a fully qualified professional chef who has been well known in the industry for 24 years with both Chef’s and management experience. She has been actively involved with SACA, and many other industry associations. She has recruited many of her own staff in her time and assisted many colleagues to find employment so now she will do it professionally.

Cindy has a background in sales, From 2012 Cindy turned her focus on Key Account Management to take focused care of her national franchise, restaurant and other food industry customers.  It was also during this period that she was exposed to the South African Barista Championships and attended several Chefs of Distinction presentations which led to an interest in the hospitality industry.

Having completed Hotelstaff training,they have hit the ground running and will be in contact with all our Durban clients within the next few weeks.

Although you cannot have a 100% success rate in the recruiting of employees, you can ensure that you stack the odds in your favour by following these 6 steps:

  1. Clearly define the type of person you need for the job:  This is the foundation of the process.  Look at your “job description” and see how closely it matches (or doesn’t) what you actually do!
  2. The brief to the employment agency or recruiter has to be spot on:  The recruiter is an extension of your company. They need a clear understanding and strong controls
  3. Criteria for short-listing:  Once you have received the best candidates from the agency or recruiter, you have to know how to sift out the excellent from the best and stay on track.
  4. How to structure an interview so that you stay within the Law and still get the information that you require:  This is a very tight line to walk, but with patience, knowledge and skill you will succeed.  You have to take time to prepare for the interview.
  5. How to question (legally) and listen effectively, so that you get behind the candidate’s mask:  This is the nitty gritty part of the process which can be very rewarding if applied mindfully.  All candidates wear masks and have hidden agendas.
  6. How to make the right decision as to whom to employ: Once you have gone through the first 5 steps, you have to “close the deal”.  This 6th step is crucial and often where it all falls down as a result of second-guessing and personal likes and dislikes, especially where you are not the sole decision maker. The more tools you use to measure the candidate , the more you are likely are to make a subjective and less emotional decision for the good of your business. Sometimes it IS a good idea to take on the person that may push you too.
